This perfect Sunday afternoon treat takes no effort at all. Whether you're a fan of cherries or not, this is a recipe that you can mix up and change for your own preference; add blueberries, change for chocolate or even use Oreos for the crumb base. Whatever you fancy. Here's how I made mine..
You will need;
100g of digestive biscuit crumbs
50g of softened butter
225g cream cheese
125g of icing sugar
1 tsp of vanilla extract
250ml of double cream, whipped
and a choice of your filling and topping
Firstly to make your base you will need to break your digestive biscuits, I found that the easiest and less messy way to do this is by adding your biscuits into a plastic/sandwich bag, tie at the top and use a rolling pin or anything hard to bash and break the biscuits into crumbs. Once you've got a crumby consistency stir together with butter in a bowl until well mixed and crumbly.
Empty the crumb mixture into your tin or dish and carefully press into the tin and ensure to go up the sides a little to give the cake a little depth. To make sure that my base was properly set I then left my tin in the fridge to set whilst I got in with preparing the cheesecake topping and filling.
With a mixer, beat together cream cheese, icing sugar and vanilla into a bowl until smooth. In a separate bowl whisk the double cream until well whipped and add to the cream cheese mixture and stir. To make my cheesecake cherry flavoured I added a handful of chopped cherries into a blender until mushy and mixed them into my cream cheese mixture. Once smooth pour on top of the set biscuit base and spread evenly. To finish decoration of my cheesecake I then added the chopped cherries on the top of my cherry-cream cheese filling.
Replace back into the fridge for 2-3 hours until firm and enjoy!
